1) To make the vegetable inventory, add the olive oil to a heavy-bottomed pan or stockpot over a medium warmth and add bay leaves and garlic, saute` for a couple of seconds

2) Add the onion, leek, carrot and mushrooms, cauliflower stem, and so forth and sweat for Four-5 minutes. Add sufficient water to generously cowl the greens and switch down the warmth to low.

three) Carry to the boil and boil gently for 15 minutes.

Four) Pour the inventory by means of a sieve. Discard the vegetable items or reserve for one more use. The liquid inventory is prepared for use. It may be saved within the fridge for as much as three days or frozen in batches for future use.
